Happy Pancake Day to you all! Pancake Day always falls 47 days before Easter, immediately preceding Ash Wednesday (First day of Lent). In countries like the US where it is more popularly known as Mardi Gras, it is celebrated as a carnival marking the last day of “fat eating” before the fasting period of Lent. So, the advent of this fun tradition is said to be borrowed from an episode way back in the 15th century, where a woman in Buckinghamshire rushed to confess her sins, mid-way through making pancakes. Also, in some parts of the world, there are pancake races, where people run while flipping their pancakes in a pan! Interesting isn't it? So, here are super easy pancake recipes you can try at home from low-calories pancakes for the one’s on a diet plan to absolute indulgence recipes for the carefree souls!

  • Before you begin with your pancake business, make sure you've got all these tips and tricks sorted.
  • Always mix all dry ingredients together in one bowl and whisk the wet ones in another. Make sure you add the dry ingredients, little at a time into the wet ingredients and gently mix. Stir only till the ingredients are just moistened.
  • The pan needs to be very hot for the pancakes. Use minimal coating of butter, rather than bunging a spoonful into the pan. A mix of butter and oil is less likely to burn so easily.
  • Heat griddle or pan over medium heat before pouring your batter onto the pan.

Low Calorie Pancakes     

Just because you are on a diet plan doesn't mean that you cannot enjoy Pancake Day. Try this easy recipe without cheating on your diet plan. Guess what? It’s just 68 calories per serving!

Grab the following:

 

115 gm plain flour

2 medium eggs

300 ml skimmed milk

90 ml Water

How to get on with it:

  • Combine the milk and a little bit of water in a jug.
  • Sift the flour into a bowl and make a well in the middle. Break the 2 eggs into it. Begin whisking the eggs incorporating the flour as you do so.
  • Gradually, add the milk and water mixture, still whisking, until all the liquid has been added and you have formed a smooth batter.
  • Heat a frying pan over a high heat. Put 2 tbsp of batter into a ladle and add to the centre of the pan.
  • Check when edges become loose (about 20 seconds) and the batter has solidified, then with a pan slice, turn the pancake over and cook for a few more seconds.
  • Remove from pan onto a  plate. Serve with a topping that fits your diet or make that bit your guilty pleasure!

Gluten Free Pancakes

Now, just because you've gone gluten free you don't have to miss out on Pancake Day this year.

Try this Gluten Free Maca Pancakes with Chocolate & Mint Avocado Cream.

Grab the following:

4 tbsp buckwheat flour

1 egg

1 tsp baking powder

1 tsp maca

1 tsp cinnamon

Vanilla essence

50 ml almond milk

For the mousse:

1 small avocado

1 tbsp cacao powder

1 tbsp maple syrup

½ tsp mint extract

Topping:

Cashew nuts/ Maple syrup/ Cacao nibs

How to get on with it:

  • In a bowl, combine the spelt flour, buckwheat flour, baking powder, maca, and cinnamon, stirring well.
  • In a separate bowl, whisk the egg with the vanilla essence and almond milk and slowly add to the dry mix. If you like thinner pancakes, just add more milk!
  • Heat up a non-stick pan on a low heat and use a tablespoon to spoon the mixture into the pan. This should make about four mini pancakes.
  • Let them cook for a couple of minutes until all the bubbles have popped and the FLIP!
  • Put on a plate and place in the oven to keep warm whilst you prepare the mousse.
  • Simply blend the avo with the maple syrup, mint extract and cacao powder until it forms a smooth mix.
  • Spread onto each pancake, plate up and drizzle with maple syrup and sprinkle on the cashews, gojis and cacao nibs for an extra crunch.

Red Velvet Pancakes with Cream Cheese Glaze

These glorious red pancakes with cream cheese icing is all that you would look for in a perfect red velvet cake.

Grab the following:

2 cups all purpose flour

3 Tbsp cocoa powder

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 cups milk

2 Tbsp white vinegar

1/2 cup granulated sugar

2 large eggs

1 1/2 Tbsp red food coloring

2 tsp vanilla extract

1/3 cup salted butter melted

Fresh raspberries and mint leaves for garnish (optional)

Cream Cheese Glaze:

12 Tbsp cream cheese, softened

6 Tbsp butter softened

2 cups powdered sugar

1/2 cup milk plus more if desired

1/2 tsp vanilla extract

How to get on with it:

  • Preheat an electric non-stick griddle to 350 degrees. In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt, set aside. Measure out milk into a liquid measuring cup and whisk in vinegar, allow mixture to rest for 2 minutes.
  • Pour milk mixture into a separate large mixing bowl and add in sugar, eggs, red food coloring, vanilla and melted butter. Whisk mixture until it is well combined. While whisking, slowly add in dry ingredients and mix just until combine.
  • Butter griddle if necessary and pour about a 1/4 - 1/3 cup batter (depending on how large you want your pancakes) at a time onto hot griddle (you can also use the back of measuring cup or spoon to lightly spread batter from center out to the edge a bit so they aren't thicker in the center then they are on the edges).
  • Cook until bubbles begin to appear on the top surface of the pancakes then flip and cook opposite side until pancake is cooked through (I didn't want the tops of the pancakes to be brownish red so I flipped them a little earlier than I normally do with pancakes, I didn't wait for many bubbles).
  • Serve warm with cream cheese glaze and garnish with fresh raspberries and mint leaves if desired.
  • For the cream cheese glaze: in a mixing bowl, using an electric hand mixer set on medium speed, blend together cream cheese and butter until well combined and fluffy about 2 minutes.
  • Add in remaining ingredients and mix about 1 minute until well combined and then add additional milk to thin if desired. Store in an airtight container in refrigerator.

Chocolate Pancakes with Chocolate Sauce, Strawberries and Bananas

How can someone say no to chocolate ever? What's more perfect for the day than some truly decadent, soft and fluffy chocolate pancakes with chocolate sauce and delicious strawberries and bananas! Drooling already?

Grab the following:

1/3 cup granulated sugar

1/3 cup cocoa powder

1/3 cup light-brown sugar

1 1/2 cups flour

1 tsp baking soda

1/2 tsp salt

1/2 cup whole milk

1/2 cup low-fat buttermilk

2 large eggs

3 1/2 Tbsp vegetable oil

1 1/2 tsp vanilla extract

Fresh strawberry and banana slices

Chocolate sauce:

1 Cup chocolate chips (use what you prefer, milk chocolate, semi-sweet or bittersweet)

1 cup heavy cream

How to get on with it:

  • Preheat an electric griddle to 350 degrees. In a mixing bowl whisk together granulated sugar and cocoa until well combined. Stir in light-brown sugar followed flour, baking soda and salt. Make a well in center of dry mixture and set aside. In a separate mixing bowl whisk together milk, buttermilk, eggs, vegetable oil and vanilla.
  • Pour wet mixture into dry mixture and whisk to blend (don't overmix, batter should still have some lumps). Butter griddle if necessary, pour batter into preheated griddle 1/4 cup at a time and slightly spread batter in a circular form outward (so the centers aren't so much thicker than edges) and allow to cook until bubbles begin to appear on the surface about 1 minute.
  • Then, carefully flip the pancake to opposite side and cook until done. Serve warm topped with chocolate sauce, strawberries and bananas.

For the chocolate sauce:

  • Place chocolate chips in a medium heat proof bowl. Bring heavy cream just to a gentle boil in a small saucepan over medium heat. Pour hot cream over chocolate chips and stir until chocolate has melted.
  • Note that the chocolate sauce will thicken as it cools, also if you want a thinner consistency you can add a few more tbsp hot cream. Reheat as needed in a bowl over a pan of simmering water.

Apple Cinnamon Pancakes

Apple cinnamon pancakes re spiced and made with apple cider to add a brilliant flavour. Before serving, the pancakes are topped with cinnamon apples cooked down in a cider until soft, yet firm.

Grab the following:

Pancake:

3/4 cup (95 grams) all purpose flour

3/4 cup (90 grams) whole wheat flour

2 teaspoons baking powder

2 tablespoons brown sugar, packed

1 teaspoon ground cinnamon

1/8 teaspoon nutmeg

1/2 teaspoon salt

1 large egg

1 cup (240 ml) apple cider

2 tablespoons butter, melted

 

Apple Cinnamon Topping:

4 large apples (or 6-8 small apples), peeled and cored

1 teaspoon lemon juice

3/4 cup (180 ml) apple cider

1/4 cup (50 grams) brown sugar, packed

1/2 teaspoon ground cinnamon

 

How to get on with it:

 

Pancakes:

 

  • In a large mixing bowl, whisk together flours, baking powder, brown sugar, cinnamon, nutmeg, and salt. Make a well in the center and add the egg, apple cider and melted butter. Stir together until combined (a few lumps are okay)
  • Pour 1/4 cup of batter onto a heated griddle and cook each side until lightly browned. Serve hot with apple cinnamon topping (below).

 

Topping:

 

  • Cut the apples into 1/8-inch slices and cut those slices in half. Put the apples in a saucepan and add the lemon juice and apple cider. Stir apples to coat thoroughly with the mixture. Cover the apples and cook over medium heat for 7 minutes.
  • Add brown sugar. Turn heat down to medium-low and cook uncovered until the juice thickens and the apples are tender, about 10 minutes. Stir in cinnamon.
  • To serve, spoon apple cinnamon on top of pancakes. Drizzle with warm maple syrup.
