Lotus stem, as the name suggests, is the stem of the aquatic lotus flower. It is mostly used in Asian cooking and is also used in herbal medicine. It has a mildly sweet taste and a crisp and crunchy texture. The lotus plant mostly grows in shallow ponds and marshes and the stem has cylinder-shaped segments.

It is rich in iron, copper, potassium, phosphorus and manganese. It is also loaded with vitamins like B and C. Have a look at 5 interesting dishes that you can prepare with this healthy and nutritious vegetable.


Lotus stem curry


Blend 2 onions, 2 tomatoes, 4 cloves of garlic, 3 green chillies and ½ inch ginger. Heat some oil in a pan and add the prepared paste. Add some red chilli powder, salt and turmeric powder. Add 2 cups of sliced lotus stem to it. Add 1 cup of water and let it simmer for 5-7 minutes. Serve hot.


Crispy chilli lotus stem


Coat 2-3 cups of thinly sliced lotus stems in cornflour and fry these in oil till they turn golden brown and keep aside. Mix ½ tbsp soy sauce, 1 tbsp red chilli sauce and ½ tsp vinegar in a bowl. In a saucepan, add the fried lotus stems and the sauce mixture. Mix well and add a pinch of salt. Serve hot.


Pickled lotus stem


Heat oil in a pan. Add 2 cups of thinly sliced lotus stem, salt and ½ tsp sugar. Add ½ cup of water and let the lotus stem cook for 3-4 minutes. Drain the water. In a bowl, add ½ tsp vinegar, chopped spring onions and a handful of sesame seeds. Put the lotus stem and mix well.



Stir-fry lotus stem


Add 2 tbsp sesame oil in a pan along with a cup of peeled and sliced lotus stem. Add ½ tbsp red chilli powder, a pinch of sugar and ¼ tsp soy sauce. Add ½ tbsp toasted sesame seeds and stir. Serve.


Indian-style lotus stem


Fry 2 cups of thinly sliced lotus stem in oil and keep aside. Heat some oil in a pan. Add ½ tsp cumin seeds and 1-2 cloves. Add 1 medium-sized chopped onion, a tbsp of ginger-garlic paste and 1 medium-sized tomato finely chopped. Season with 1 tsp red chilli powder, ½ tsp garam masala, ¼ tsp turmeric powder and a pinch of salt. Add the sliced lotus stem and cook for 2-3 minutes. Serve hot.
