Who doesn’t suffer from hunger pangs in the evening? Deciding what to snack on every day can be real trouble. In a rush, most people tend to go for fast food or snack bites. If you wish you had a healthy option available, here’s something for you.

Wherever you go in India, a different kind of chaat awaits you. A unique rendition for the snack lovers, the Pumpkin Flower Chaat is not only defined by its taste but also by its nutritional value.

Here’s the recipe by Chef Rajesh Kumar Singh from The Taj Mahal Hotel in New Delhi.

Ingredients:

  • Pumpkin flower – 3 pieces
  • Green pumpkin – 100g
  • Fennel seeds – 2g
  • Carom seeds – 2g
  • Methi seeds – 2g
  • Salt – 2g
  • Oil – 10ml
  • Turmeric – 2g
  • Tomatoes (chopped) – 5g
  • Green chillies (chopped) – 2g
  • Onions (chopped) – 5g
  • Garlic (chopped) – 3g
  • Ginger (chopped) – 2g
  • Corn flour – 5g
  • Degi chilli – 5g
  • Coriander powder – 2g
  • Chaat masala – 4g​

To Garnish:

  • Amchur chutney – 10ml
  • Mint chutney – 10ml
  • Edible flower – 4g
  • Sweet yoghurt – 10g​

Method:

  • Take a green pumpkin. Wash it well and deseed without peeling the skin and cut into small dices.
  • Take a thick bottom pan. Add oil, fenugreek seeds, fennel seeds, carom seeds and let it crackle in oil. Now add chopped garlic, chopped ginger, chopped green chillies, chopped onions, chopped tomatoes and sauté well.
  • Add small dices of pumpkin, turmeric powder, degi chilli, salt and cook until mashed properly.
  • Make a corn flour batter with cold water. Add salt into it and let it rest for five minutes.
  • Wash pumpkin flower thoroughly in cold water. Pat dry on paper and mix in batter. Deep fry it after taking out from fryer add chat masala and keep aside.
  • Take a plate, mould in the pumpkin mash and place the deep fried pumpkin flower. Garnish it well with amchur chutney, mint chutney, sweet yoghurt and edible flower.
