Who doesn’t like pasta? It is wholesome, delicious and comforting. One such famous pasta dish is Cacio e pepe. This dish is a very simple three-ingredient one that combines simplicity and sophistication perfectly. It is quick to put together but is also very easy to go wrong as the sauce in this dish is made by mixing water and grated cheese and this can very easily become clumpy and gooey.

The first ingredient is pasta and when it comes to choosing the perfect pasta for this dish, a hands-down winner has to be spaghetti. Spaghetti gives the dish the required kind of sauciness and slurpiness. The second ingredient of this dish is pepper. For getting the most flavour out of the peppercorns, simply toast them a little before crushing them. The third and last ingredient is cheese. Traditionally, it is made with salty pecorino romano, but one can also add some grated parmesan cheese to further enhance the flavour of the dish.

Here is a simple recipe to make this easy but tricky pasta dish at home.

Boil water in a pan and add a pinch of salt to it. Add spaghetti in the water and take out around 250-270 ml of water from the pan. Drain the pasta after 5-7 minutes to cook spaghetti al dente and keep aside.

Lightly toast 2-3 tbsp of black peppercorns in a saucepan until fragrant and crush them roughly. Keep this aside.

Take a bowl and put 70-80 g grated pecorino romano along with the crushed peppercorns. Add 250-270 ml of water that was used in the pasta to make a sauce. Add the pasta and stir well to coat the pasta in the sauce.

Take this pasta out in a bowl and sprinkle some pepper on top. Serve hot.
