With the winter season, comes several illnesses such as common cold, flu, and Bronchiolitis among others. And we constantly feel hungry too. However, there is one simple dish that can easily tackle both. Today, we are talking about carrot and ginger soup prepared by Upasana Kamineni Konidela and her friend Aditi. They shared a healthy and low-calorie soup recipe with Pinkvilla and it is not only stomach-filling and nutritious but also yummy. The best part of the soup is that one can make it in a jiffy and the ingredients too are easily available for this recipe. Aside from keeping winter-related illnesses and hunger at bay, the soup can also be included in the diet by the weight watchers as it also aids in weight loss too. Yes, one can replace a one-time meal with this soup to create a calorie deficit and lose weight to achieve your weight loss goal.

For the recipe, one has to prepare the stock first. Saute the vegetables (carrots, pepper, onion, celery, and garlic) in olive oil and then add water. Aditi provided us with a smart hack when it comes to stock. She revealed that she prepares a good amount of stock and stores them in an ice tray and freeze it. She pops it out and uses it whenever she wants. Upasana also shared a smart hack. She said that one can make a good amount of stock with leftover veggies before they rot. So, instead of throwing a little bit of many vegetables, one can make a broth and use them for gravy or soup base. For the soup, one needs the following ingredients: butter, salt, ginger, onion, carrot, stock and peels of orange fruit. Check out the video for the full recipe and method.
